Step 1

Our carefully chosen, federally inspected meat is ran through a slicer to slice up the meat.

Step 2

Once sliced, the meat is placed in a tumbler and a package of cure is added.

Step 3

Seasonings are added and the meat is refridgerated and placed in a lug (a big plastic container) to marinate for 24 hours.

Step 4

After the marinated process, the meat is laid out on a screens and prepared for the smokehouse.

Step 5

These screens are placed on racks and put in the smokehouse where it will cook for 3-4 hours, rotating 2-3 times per cook to ensure that everything is cooked evenly.

Step 6

Racks are pulled out of the smokehouse, separated into the lugs put in the cooler to cool.
